A blend of red kidney beans and yellow corn with a crunch of an apple all tossed together to make a quick healthy salad or side dish... Recipe: 2 cans of red kidney beans 2 cans of sweet corn 1 apple (tart) 2 cups of baby cucumber 1 1/2 cup of sour cream 1/2 cup mayonnaise salt to taste black pepper to taste Method: To a big bowl add the corn, kidney beans, apples, and cucumbers and toss, make sure you splash it with lemon juice as to make sure the apple don't discolor. Mix the sour cream and mayonnaise together until well blended, season with salt and pepper. Lastly mix everything together and toss!!! Chill for at least 2 hours and enjoy!!! Sprinkle with more black pepper if you choose!!!!
